Preparation steps

1.

Rinse the potatoes and cut into slices. Rinse with cold water and pat dry.

In a pan or deep fryer, heat to oil to 160°C (approximately 325°F). Fry the potatoes in the oil for 3-4 minutes until pale yellow.

Drain the potatoes on paper towel and allow to cool.

Raise the temperature of the oil to 180°C (approximately 400°F) and fry the potatoes a second time for 2-3 minutes until golden brown and crispy. Remove the potatoes from the oil and drain on paper towel. Keep the fries warm in the oven (100°C, approximately 225°F) until all fries are finished frying.

5.

Season with salt and serve.
