Heat the vegetable oil in a saucepan until 165°C (approximately 330°F). It's hot enough when you insert a wooden spoon handle into the oil, and air bubbles rise to the surface.

Peel the potatoes, julienne into uniform pieces, and pat dry.

Add to the oil in batches. Cook for 5 minutes until soft. If the fries begin to change color, they have been cooked too long.
