2 Tbsps finely chopped Basil
3 Tbsps butter
4 slices smoked Salmon (about 100 g)
Basil (for garnish)

Preparation steps

1.

Peel and finely chop the shallot. Separate the eggs, beat the egg whites until stiff with a pinch of salt. Mix the yolks with 4 tablespoons creme fraiche, mustard and lemon juice. Season with salt and pepper,  and fold in the egg whites loosely. Heat half the butter in a nonstick frying pan. Sauté half of the shallot. Add 1/4 of the egg mixture and cook for 6-8 minutes. Cook until the underside is golden brown and the surface begins to bubble. Turn over and continue to cook for 2 minutes. Then pull the pan from the heat.

Fill each omelette with 1 tablespoon creme fraiche 1 slice of smoked salmon, and basil.. Add salt and pepper and fold the omelette using a spatula. Cook the other omelets.. Put the omelets on plates and serve garnished with basil.
