Preparation steps

Peel and dice onion.

Heat oil and butter in a large skillet. Beat eggs, season with salt and pepper and stir in parsley. Pour egg mixture into the pan. Top with smoked salmon, onion and capers. Cover and cook over low heat until eggs are set. Season with salt and pepper. Serve sprinkled with cheese.
