4 Chicken breasts (approx. 120 g each)
2 Tbsps all-purpose flour
2 eggs (beaten)
1 cup Panko
3 Tbsps vegetable oil
2 Pita bread (halved)
8 Lettuce (e. g. lollo rosso and bioanda)
2 Tomatoes (sliced)
4 Tbsps white balsamic vinegar
2 Tbsps lemon juice
5 Tbsps olive oil

Preparation steps

1.
Gently tenderise the meat and season with salt and ground black pepper. Dust with flour. Drag through the beaten egg and roll in the Panko. Fry slowly in hot vegetable oil on all sides for 8-10 min until golden brown.

Stuff the chicken, lettuce and tomatoes into the pita pockets.
3.
Mix together the vinegar, lemon juice, olive oil and a pinch of sugar and season with salt and ground black pepper. Drizzle into the pitas and serve.
