- 14 ozs ribbon pasta
- 1 shallot
- ⅓ cup smoked Salmon
- 1 cup Smoked Fish of your choice (e. g. trout)
- ¼ Cucumber
- ½ cup Pumpkin seed
- salt
- White pepper
- 4 Tbsps lemon juice
- 4 Tbsps olive oil
- 1 Tbsp white balsamic vinegar
- 1 generous pinch Mustard
- ½ tsp sugar

Preparation steps

Cook the pasta in plenty of boiling, salted water according to the package instructions until al dente. Then drain, refresh in cold water and drain well. Meanwhile peel the shallot and chop very finely. Wash the cucumber, cut into eighths lengthwise and cut into pieces. Cut the salmon into strips. Flake the smoked fish into bite-sized pieces. Whisk together the lemon juice, vinegar, mustard, salt, sugar, pepper and oil to make a dressing. Carefully mix the pasta with the pumpkin seeds, cucumber, shallot, smoked salmon and smoked fish. Add the dressing, cover and put into the refrigerator for about 1 hour before serving.
