2 Tbsps slivered almonds (20 grams)
4 ripe blue Figs
4 ripe green Figs
2 eggs
6 Tbsps dry white wine
1 Tbsp lemon juice
1 tsp sugar (10 grams)

Preparation steps

1.

Toast the almond slices in a dry pan till golden brown and set aside.

Rinse and pat dry the figs. Cut the blue figs into quarters lengthwise and the green figs into slices. Arrange the figs on 4 dessert plates.

For the zabaglione, break the eggs while separating the yolk and white. In a metal bowl, add the yolks with dry white wine, lemon juice and sugar and mix until fluffy. 

Now place the bowl over a hot water bath for 5-10 minutes while churning with a hand mixer.

Pour the prepared zabaglione over the figs and sprinkle the toasted almonds slices. Serve.
