400 grams mixed Fruit (such as pomegranate, orange, kiwi, grapes and melon)
2 Tbsps lemon juice
4 eggs
2 Tbsps sugar (40 grams)
100 milliliters Marsala wine

Preparation steps

1.

Rinse and trim fruit. Peel if necessary and chop. Mix fruit with lemon juice and divide among 4 oven-safe ramekins.

For the zabaglione sauce: Separate eggs (reserve whites for another use).

In a metal bowl, whisk yolks with sugar until foamy. Set bowl over a pan of simmering water and continue whisking until pale and thick. Stir in Marsala.

4.

Remove sauce from heat and whisk again. Pour sauce over fruit and broil, watching carefully, until tops are golden, 1-2 minutes.
