Ingredients

1.333 cups semi-sweet chocolate (70% cocoa, roughly chopped)
½ cup Crème fraiche
3 Tbsps Rum (or almond syrup)
1 Tbsp butter
4 Tbsps cocoa powder
2 cups Couverture white chocolate (chopped)

Preparation steps

To make the truffle filling, heat the creme fraiche, add the bittersweet chocolate and stir until dissolved. Stir in the rum and butter and remove from the heat.

Chill until the mixture has firmed somewhat but is not yet hard (around 1 hour).
3.
Use your hands to roll small portions of the mixture into balls and chill again for around 20 minutes.
4.
To coat the truffles, melt the white chocolate over simmering water and let cool slightly.
5.
Dip the truffles into the white chocolate using a praline fork and place on a wire rack or baking parchment to set.
