Endive and Vegetable Salad with Oranges
Rinse endive, trim and arrange on plates.
Peel oranges thoroughly and cut into fruit fillets. Collect resulting juice.
Rinse radishes and thinly slice.
Peel carrot and slice into thin strips.
Mix orange juice in a bowl with lemon juice, parsley, nuts, oil and honey and season with salt.
Place radish, carrot strips and orange on the endive and serve drizzled with the dressing.
