- 4 Red onions
- 1 Endive
- 2 Tbsps Vinegar
- salt
- freshly ground pepper
- 1 pinch sugar
- 6 Tbsps vegetable oil
- 100 grams soybean sprout

Preparation steps
1.
With a sharp knife, remove peel and pith from oranges. Cut oranges into slices, collecting any resulting juice. Peel onions and cut into wedges. Rinse, trim and separate endive leaves. Rinse and spin dry.
2.
In a large bowl, whisk vinegar with salt and pepper to taste. Whisk in a pinch of sugar and oil. Add oranges, onions and bean sprouts and toss to combine. Fold in endive leaves and divide salad among shallow bowls.
