- 3 Eggplant cut into slices (1/2 inch thickness)
- For Marinade
- 3 Tbsps olive oil
- 2 Tbsps white wine vinegar
- 1 small onion (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 1 red chili pepper (seeds removed; cut into thin strips)
- 1 Tbsp fresh parsley (chopped)
- For the Garlic Sauce
- 1 cup plain Yogurt
- 3 cloves garlic cloves (crushed)
- 1 Tbsp fresh parsley (chopped)

Preparation steps
1.
In a small bowl mix olive oil, vinegar, onion, garlic, chili pepper and parsley together. Season with salt and pepper.

Arrange eggplant on a large grill pan. Brush with each side with marinade and cook under a preheated broiler for 10 minutes, turning as needed. Check often.
3.
Meanwhile, in a separate small bowl mix yogurt, garlic and parsley together. Season to taste with salt and pepper. Set aside and serve with cooked eggplant.
4.
Divide cooked eggplant between plates. Drizzle with remaining marinade. Serve with garlic sauce.
