Ingredients

For the cupcakes
½ cup butter
½ cup sugar
2 eggs (beaten)
1 small, unwaxed lemon (finely grated zest)
cup self-rising flour
½ tsp Baking powder
1 tsp vanilla extract
To decorate
6 Tbsps Apricot Jam (jelly)
2 ⅔ cups white Sugar paste
powdered sugar
orange, paste Food coloring
yellow, paste Food coloring
12 small, thin Licorice

Preparation steps

1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in a 12 hole bun tin.
2.
Cream the butter and sugar in a mixing bowl until light and creamy.
3.
Add the eggs gradually, beating well, then beat in the lemon zest.

Sift in the flour and baking powder and gently fold into the mixture. Stir in the vanilla.
5.
Spoon into the paper cases and bake for 12-15 minutes until springy to the touch. Place on a wire rack to cool completely.
6.
To decorate: heat the apricot jam gently until melted. Brush lightly over the cakes.
7.
Using 2/3 of the sugarpaste roll 1/3 out on a surface lightly dusted with icing sugar and cut out 18 small discs, smaller than the diameter of the cakes. Press a disc onto each cake and brush the discs lightly with apricot jam. Reserve the sugarpaste trimmings.
8.
Roll the remainder of the 2/3 sugarpaste into 12 small balls and 12 smaller balls for the 'body' and 'head'. Attach the balls in pairs with a dab of jam and place on top of the sugarpaste disc.
9.
Cut the remaining 6 discs in half and attach 2 on each snowman with a dab of jam for the 'pockets'.
10.
Knead orange colouring into 3/4 of the reserved sugarpaste. Shape 12 small pieces into 'hats' and attach a thin strip of liquorice to each hat with a dab of jam. Attach the hats onto the snowmen with a dab of jam.
11.
Roll out the remaining orange sugarpaste and cut into strips for the scarves.
12.
Roll out the white sugarpaste trimmings and cut into small strips. Attach to the scarves with a dab of jam. Place the scarves carefully around the joins between the body and head of the snowmen.
13.
Knead the yellow colouring into the remaining white sugarpaste and shape 12 small pieces into cones for the 'noses'. Attach to the snowmen with a dab of jam.
14.
Roll out the remaining yellow sugarpaste and cut out 25 'hands' using a card template. Attach to the snowmen with a dab of jam.
15.
Press silver balls into the snowmen for the eyes and pocket buttons.
16.
Scatter a few silver balls on the sugarpaste discs in front of the snowmen.
