- 3 ½ ozs white chocolate
- 9 ozs Sponge cake (plain)
- 2 Tbsps Shredded coconut
- 2 Tbsps chopped almonds
- To decorate
- 3 ½ ozs Dark chocolate (60% cocoa solids)
- 1 ¾ cups powdered sugar
- ½ Tbsp water
- pink Food coloring
- multi-colored sugar sprinkles
- colored Chocolate bean

Preparation steps
1.
Melt the white chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat.
2.
Crumble the cake into a bowl and stir in the melted chocolate, coconut and almonds until well combined.
3.
Roll golf ball sized pieces of the mixture into balls. Stick a lollipop stick into each ball and chill for about 30 minutes until firm.
4.
To decorate: melt the chocolate as before.
5.
Sift the icing sugar into a bowl and stir in just enough water to give a thick coating consistency. Put a quarter of the icing into a small bowl, cover with a damp cloth and set aside. Add the colouring to the larger bowl and stir until blended.
6.
Sprinkle the sugar sprinkles onto a large plate.
7.
Remove the balls from the fridge, dip half the balls into the pink icing, then scatter over the sugar sprinkles and place in a glass or cup. Repeat with the remaining cake balls, dipping them in the melted chocolate then scattering with sugar sprinkles. Leave to set.
8.
Drizzle the remaining white icing (thin with a little water if it has become too thick) over the pop cakes and attach 2 chocolate beans to each. Leave to set.
