Preparation steps

Put all the ingredients for the curry paste into a mortar and crush to a paste.

Wash the lime in hot water, rub dry and grate the peel using a fine grater. Then halve and squeeze the lime. Peel and finely chop the shallot and garlic. Cook the ribbon noodles according to the package instructions until al dente.

Meanwhile heat the oil and saute the chopped onion and garlic until translucent. Add the lemon peel and stir in the coconut milk. Stir in the lime juice, curry paste and fish sauce and season to taste with salt, pepper and sugar. Simmer the sauce gently for about 5 minutes, until it has a creamy consistency. Remove from the heat and blend with a hand blender. Drain the cooked noodles, mix at once with the coconut curry sauce and serve garnished with parsley leaves.
