Compared to white noodles, the spelt flour variant offers a more nutritious alternative. The flour from the whole grain is easily digestible and scores with a high content of minerals and proteins.
Of course, spelt bowl noodles can also be made entirely from wholemeal flour, in which case you may need a little more water for the dough. By the way, other noodles can also be prepared from the vegan pasta dough: How about tagliatelle, spaghetti, ravioli or lasagna plates?

- 3 ½ ozs Spelt flour (Type 630 + 2 Tbsp for machining)
- 10 ½ ozs Spelt flour
- 3 Tbsps olive oil
- ½ tsp salt

Preparation steps
Knead the two types of flour vigorously with oil, salt and 6-7 ounces water to form a smooth, elastic and malleable dough. Form the dough into a ball, cover with a damp cloth and chill for at least 1 hour.
Then knead the dough for the spelt noodles once again. Then cut into 2-4 pieces, form rectangular plates and roll out thinly with a rolling pin.

For bowl noodles made of spelt, cut 1.5-inch wide strips lengthwise from the dough with a knife and cut 1-inch wide rectangles again with a wheel.

Press the individual rectangles together in the middle to form a loop. Place the pasta on a large plate, platter or board with flour and leave to dry. In the meantime, bring plenty of salted water to the boil. Cook spelt loop pasta for about 3 minutes, drain and serve as desired.
