1 cup Red wine
1 pc untreated Orange peel
2 Tbsps Port wine
3 Tbsps Orange juice
4 Tbsps Red currant jelly
½ tsp hot Mustard
salt
1 pinch ground ginger
1 pinch cayenne pepper
1 pinch White pepper
2 Tbsps sliced almonds

Preparation steps

Put the cranberries into the wine and soak overnight in a cool place. Next day add a piece of orange peel and bring to the boil, stirring from time to time. Remove the orange peel and mix the sauce with the port wine, orange juice, redcurrant jelly and mustard. Season to taste and cool to lukewarm. Meanwhile toast the almonds in a dry non-stick frying pan until lightly browned. Leave to cool and carefully stir into the sauce before serving.
