- 300 grams red Currants
- 1 shallot
- 1 organic Orange
- 1 organic lemon
- 5 Tbsps Red currant jelly
- 1 tsp peppercorns
- 1 tsp mustard powder
- 1 Tbsp vegetable oil
- Worcestershire sauce
- 2 centiliters Port wine
- salt

Preparation steps
1.
Rinse the red currants, remove the stems and press the fruit with a fork.

Grate the zest from orange and lemon and then squeeze out the juice.
3.
Peel the shallot and chop finely. Saute the shallot with crushed peppercorns in hot oil. Add in the lemon and orange juice and then add in the red currants. Stir in the red currant jelly, lemon and orange zest and mustard powder, and let simmer for about 10 minutes. Remove from heat and stir in the Worcestershire sauce and port wine, season with salt and leave to cool.
