Crunchy Granola with Kefir, Orange and Banana
Finely grate zest of one orange. With a sharp knife, cut off peel and bitter white pith from two of the oranges. Working over a bowl to catch the juices, cut between membranes to remove whole segments. Squeeze the remaining pulp over bowl and mix collected juice with kefir and honey.
Cut off peel from remaining two oranges and slice. Peel and slice bananas. Divide oranges segments, orange slices and banana slices among bowls. Top with granola. Divide kefir over bowls and sprinkle with orange zest. Garnish with lemon balm.
