For Spicy Chocolate Sauce

4 ozs Dark chocolate
1 pinch cayenne pepper
1 pinch Chili powder
3 Tbsps granulated sugar
0.333 cup heavy cream
1 pinch salt

Preparation steps

In a shallow dish or pie tin, combine 1/4 cup sugar and cinnamon; set aside.

In a large saucepan, set over medium heat, combine water, brown sugar, salt and butter; stirring frequently, bring to a boil. Remove pan from heat source and whisk in flour, stirring until well blended.

In a medium bowl, whisk together eggs and vanilla; add to the flour mixture and stir until completely blended.

Heat about 2-inches of vegetable oil in a 12-inch frying pan until the oil reaches 375º F.

Fill a large pastry bag with the churro dough and attach an open star (4B) decorating tip. Once the oil is hot enough, squeeze about 4-inches of dough into the hot oil. Repeat this process, cooking as many churros at a time that will fit in the pan without overcrowding. Cook for 1 to 2 minutes. Turn over with a slotted spoon and cook for another minute or until golden brown. Drain on absorbent paper towels; let cook slightly. While still warm, sprinkle heavily with sugar and cinnamon.

Using a double boiler, melt the butter and chocolate together. Add cayenne, chili powder, and sugar; stir until smooth. Slowly add in the cream and salt; mix to combine. Use as a dipping sauce or drizzle over churros.
