120 grams Pastry flour
60 grams butter
1 Tbsp milk (1.5% fat)
30 grams sugar

200 grams Chocolate (70% cocoa)
180 grams butter
4 eggs
120 grams sugar

Preparation steps

For the dough, mix the flour, butter, milk and sugar. Knead into a smooth dough. Roll the dough out onto a lightly floured surface  and press into a mini tart tin (approximately 20-22 cm diameter), forming an edge. Chill in the refrigerator.

Preheat the oven to 200°C (approximately 400°F). 

For the filling, chop the chocolate and melt over a hot water bath. Remove from the heat and gradually stir in the cold butter. Separate the eggs. Beat the egg whites until stiff. Beat the egg yolks with the sugar until fluffy. Gently stir the egg yolk mixture into the chocolate mixture. Fold in the egg whites. Sift in the flour and carefully fold together. Pour the mixture onto the dough and smooth. Bake for 30-40 minutes. Let cool and serve.
