250 grams Sour cherry (from a jar)
200 grams Dark chocolate
1 egg
2 egg whites
60 grams powdered sugar
200 milliliters Whipped cream
vegetable oil (for the pan)
40 grams Pistachio

Preparation steps

1.

Drain cherries. Coarsely chop chocolate with a knife and melt over a hot water bath.

Separate egg and place egg whites in a large bowl and refrigerate. Put egg yolks in a bowl, add powdered sugar whisk over a hot water bath until thickened. Add melted chocolate. Then beat chocolate mixture over an ice water bath until cooled.

Whip cream until stiff and fold into cold chocolate cream. Beat egg whites until stiff. Fold egg whites and cherries into chocolate cream.

Brush a baking dish with a little oil. Line baking dish with plastic wrap, fill with chocolate cream and smooth. Cover with foil and let completely freeze for at least 6 hours.

Remove chocolate from the freezer about 10 minutes before serving. Place baking dish upside down on a dessert plate to remove chocolate cream, remove dish and remove plastic wrap. Sprinkle chopped pistachios on chocolate ice cream.

6.

To serve, slice chocolate cream. If needed place the knife briefly in hot water and serve to taste with black cherries.
