½ cup dry white wine
1 Vanilla bean (split lengthwise)
½ cup sugar
6 cups pitted, frozen Cherries
For Chocolate Waffles
1 ½ cups all-purpose flour
3 Tbsps sugar
½ cup cocoa powder
1 tsp Baking powder
1 tsp salt
½ tsp baking soda
3 eggs (lightly beaten)
4 Tbsps butter (melted and slightly cooled)
1 tsp pure vanilla extract
2 cups Buttermilk (at room temperature)
¾ cup Chocolate chip
In Addition
non-stick vegetable oil spray (for waffle iron)
4 cups vanilla bean Ice cream (to serve)

For Poached Cherries:

In a saucepan, set over medium-high heat, combine the water, wine, and both halves of the vanilla bean. Bring to a boil; reduce heat to a simmer. After 5 minutes, add the sugar to the simmering liquid. Stir constantly until the sugar is dissolved. Add the frozen cherries, return to a simmer and continue to cook for an additional 7 to 8 minutes. Remove the vanilla bean prior to serving.

Meanwhile, preheat the waffle iron according to manufacturer's directions.

In a medium bowl whisk together the flour, sugar, cocoa powder, baking powder, salt, and baking soda. In a separate bowl beat together eggs, butter and vanilla; slowly add the buttermilk. Add the wet ingredients to the dry mixture; add the chocolate chips, stirring until just combined. Allow batter to rest for 5 minutes.

Generously coat the waffle iron with non-stick cooking spray. Ladle the recommended amount of waffle batter onto the center of the iron. Close the iron top and cook until the waffle is crispy on both sides and is easily removed from iron. Serve immediately or keep warm in a 200ºF oven until ready to serve.
