250 milliliters milk
3 fresh egg yolks
1 Vanilla bean (slit)
75 grams sugar
300 grams Dark chocolate
200 grams Whipped cream
1 tsp cocoa powder

Preparation steps

Heat milk in a saucepan and boil briefly. Beat egg yolks with vanilla seeds until fluffy and gradually add sugar, beating constantly. Combine egg mixture with hot milk, whisking constantly. Return to the pan and heat through, whisking, until mixture thickens. Remove from heat.

Melt half of chocolate with 3 tablespoons of cream over hot water bath, stirring, and add to milk mixture. Add cocoa and whisk until chocolate is well incorporated and cool. Refrigerate for 1 hour. Chop remaining chocolate finely. Whip remaining cream slightly and add to the milk. Finish preparing ice cream in an ice cream machine. If desired, serve in ice cream cones garnished with chocolate.
