Chocolate-Cherry Muffins

- 200 grams Sour cherry (glass)
- 100 grams Chocolate
- 100 grams butter
- 3 eggs
- 80 grams powdered sugar
- 30 grams Cappuccino powder (instant)
- 150 grams Pastry flour
- 2 tsps Baking powder
- ½ tsp baking soda
- 200 grams cream cheese
- 1 tsp grated Orange peel
- 4 Tbsps Orange juice
- 1 Muffin tin
- 12 Baking cups
- butter (for greasing)
- Pastry flour (for dusting)
- For the topping
- 2 Tbsps Cabbage
- 100 grams powdered sugar
- 12 Maraschino cherry
Preparation steps
Melt the chopped chocolate with the butter over low heat. Beat 2 eggs, 50 g (approximately 2 ounces) of powdered sugar and the cappuccino powder until fluffy. Mix 100 g (approximately 1/2 cup) flour, baking powder and baking soda with the chocolate mixture into the egg mixture.
Mix the cream cheese with the orange zest and juice until smooth and incorporate the remaining egg, flour, and powdered sugar.
Drain the sour cherries.
Butter the wells for the muffin tin and dust with flour.
Preheat the oven to 180°C (approximately 350°F). Divide half of the chocolate batter into the muffin tin, and top with half of the cherries. Add the cream cheese mixture, top with the remaining chocolate batter and cherries. Bake for 20-25 minutes. Remove from the oven, and let cool for at least 5 minutes.
For the topping, heat the cherry juice and stir in the powdered sugar until thickened. Drizzle muffins with the glaze, and top with a cocktail cherry.
