250 grams butter
200 grams Dark couverture chocolate
6 eggs
100 grams sugar
grated lemons (zest)
1 Tbsp lemon juice
Vanilla bean
70 grams Pine nuts
2 Tbsps cornstarch
butter (for the pan)
Pastry flour (for the pan)
powdered sugar (for dusting)
cocoa powder (for dusting)

Preparation steps

1.

Crush the chocolate and melt with the butter over a hot water bath.

2.

Separate the eggs. Beat the egg whites with the lemon juice until very stiff.

3.

Mix the egg yolks, sugar, lemon zest and vanilla until fluffy. Slowly mix in the chocolate and the pine nuts.

4.

Fold the egg whites into the chocolate mixture. Sift in the cornstarch and mix together loosely.

5.

Grease the pan with butter and sprinkle with flour. Pour the batter into the pan and smooth.

6.

Bake for about 45 minutes at 180°C (approximately 350°F), until a toothpick inserted into the center comes out clean. Remove from the oven and cool slightly. Remove from the pan and cool completely on a wire rack.

7.

Serve dusted with powdered sugar and cocoa powder.
