- 2 cups honey
- ⅔ cup Seed oil (e. g corn or sunflower oil)
- ½ cup clarified butter (scant)
- 2 ¼ cups brown sugar
- 5 ozs Dark chocolate
- 1 ⅓ cups hazelnut flour
- 1 pinch salt
- 1 tsp cinnamon
- 1 tsp ground cloves
- 4 eggs
- 4 ½ cups all-purpose flour
- 1 packet Baking powder
- In addition
- Apricot Jam
- powdered sugar (for dusting)

Preparation steps
1.
Put the honey, oil, clarified butter and sugar into a pan and dissolve over a medium heat, stirring. Remove from the heat and cool slightly.

Break up the chocolate and melt in the hot mixture, then stir in the hazelnuts, salt, spices and eggs. Mix the flour and baking powder, sieve onto the mixture and stir in.

Spread the mixture on a deep, greased baking tray and bake at 180° for 20-25 minutes. Test to see if it is cooked by inserting a needle. When done, take out and leave to cool.
4.
For the fir trees, cut stars of different sizes out of the cake and assemble, sticking them together with warmed apricot jam. Dust with icing sugar.
