- 500 grams Chicken breasts
- salt
- freshly ground peppers
- 2 garlic cloves
- 4 sprigs fresh cilantro
- 2 tsps ground ginger
- 1 tsp Chili powder
- 2 eggs
- 200 grams breadcrumbs
- vegetable oil
- juice of Limes
- 4 Limes
- 12 Wooden skewers
Preparation steps

Rinse the chicken, pat dry and finely chop. Rinse the cilantro, spin dry and finely chop. Peel the garlic and chop finely. Rinse and slice the limes.

In a bowl, mix together the chicken, eggs, bread crumbs, garlic, cilantro, ginger, chile powder and lime juice until well combined. If the mixture is too soft to shape, add some bread crumbs. If it's too firm, add 2 tablespoons of water, season with salt and pepper.

With dampened hands, shape the chicken mixture into small croquettes. Heat 10 tablespoons of oil in a skillet and saute the croquettes until cooked through, about 4 minutes. Drain on paper towels and thread each on a wooden skewer. Serve hot with lime wedges.
