Preparation steps

1.

Rinse the chicken, pat dry and cut into small cubes. Peel the ginger and grate finely. Seed the chile pepper and finely chop. Mix the chicken in a bowl with the ginger, chile, mint, oregano, oil, lemon juice, sugar and pepper. Covere and marinate at least 1 hour.

Thread onto skewers, season with a little salt and place on the hot grill and cook about 5 minutes or until done. Remove and serve.
