250 grams Chicken breasts
5 Tbsps soy sauce
2 tsps Sambal oelek
1 onion
50 grams roasted unsalted Peanuts
1 Tbsp vegetable oil
1 garlic clove
100 milliliters Coconut milk (unsweetened)
juice of lemons
1 pinch sugar
salt
4 long Wooden skewers

Preparation steps

1.

Soak wooden skewers in cold water (to prevent them from burning on the grill).

2.

Cut chicken breast into bite-sized pieces and thread onto wooden skewers. In a shallow dish, stir together 3 tablespoons soy sauce and 1 teaspoon sambal oelek. Add chicken skewers and marinate about 30 minutes.

Peel and chop onion. Finely grind peanuts.

Heat oil in a frying pan. Sauté onion and ground peanuts. Press garlic through a garlic press into the pan and cook until fragrant. Add coconut milk and lemon juice. Season with sugar, salt, remaining soy sauce and remaining sambal oelek. Simmer a few minutes and taste for seasonings.

5.

Lay a piece of aluminum foil on a hot grill. Place chicken skewers on top and grill about 4 minutes per side. Serve with peanut dipping sauce.

6.

Serve with lemon wedges, if desired.
