Ingredients

for

For the chicken satay
2 garlic cloves
1 shallot
¼ tsp Chili powder
¼ tsp ground Cumin
¼ tsp ground cilantro
2 Tbsps soy sauce
4 Tbsps Coconut milk
2 Tbsps sesame oil
4 Chicken breasts (each around 140 grams) (approximately 5 ounces)
For the peanut sauce
150 grams unsalted Peanuts
200 milliliters Coconut milk
2 Tbsps Peanut butter
½ tsp Curry powder
1 organic lemon (zested and juiced)

Preparation steps

For the chicken satay: Peel the garlic and mince. Peel the shallot, chop finely and mix with the garlic. Add the spices, soy sauce, coconut milk and sesame oil. Rinse the chicken, pat dry and cut in half lengthwise. Add the meat to the sauce, cover and marinate in the refrigerator for at least 2 hours.

For the peanut sauce: Toast the peanuts in a dry frying pan until golden brown, let cool then chop coarsely. Bring the coconut milk, peanut butter and curry to a boil, add the chopped peanuts, lemon zest and lemon juice and boil for about 5 minutes until creamy. Let cool.

Preheat the grill. Remove the chicken from the marinade and arrange on soaked wooden skewers. Grill the skewers for 8 minutes, turning occasionally and brushing with the marinade.

Serve the chicken satay with peanut sauce, sweet and sour sauce and soy sauce, if desired.
