250 grams Chicken breasts
5 Tbsps soy sauce
2 tsps Sambal oelek
1 onion
50 grams roasted unsalted Peanuts
1 Tbsp vegetable oil
1 garlic clove
100 milliliters Coconut milk (unsweetened)
1 lemon (juice)
1 pinch sugar
salt
4 long Wooden skewers

Preparation steps

1.

Soak wooden skewers in cold water to prevent them from burning on the grill.

2.

Cut chicken into bite-sized pieces and thread onto soaked wooden skewers. Mix together 3 tablespoons soy sauce with 1 teaspoon sambal oelek. Pour mixture over chicken and let marinate about 30 minutes.

Peel and chop onion. Finely chop peanuts.

In a frying pan, sauté onion and peanuts in oil. Press garlic through a garlic press into the pan. Add coconut milk, lemon juice, sugar, salt to taste, remaining soy sauce and remaining sambal oelek. Simmer a few minutes and season to taste.

5.

Cover a hot grill with aluminum foil. Place chicken skewers on top and grill about 4 minutes per side. Serve with peanut sauce.

6.

Serve chicken satay with rice and red and green bell pepper cubes, if desired.
