Ingredients

for
4
For the sauce
1 onion
500 grams Cranberry
2 Oranges (juiced)
100 milliliters apple cider vinegar
175 grams brown sugar
1 pinch Ground cinnamon
salt
cayenne pepper
For the burger
400 grams Chicken breasts
1 egg
1 generous pinch lemon zest
1 tsp chopped fresh parsley
2 Tbsps breadcrumbs
salt
freshly ground peppers
1 Tbsp vegetable oil
1 Apple (such as Granny Smith)
4 Hamburger bun

Preparation steps

1.

Peel the onion and finelychop. Rinse the cranberries, drain and bring to a boil along with the diced onions, the orange juice, vinegar, sugar, cinnamon and salt. Let simmer about 15 minutes, stirring occasionally until slightly thickened. Season with salt and cayenne pepper.

2.

Rinse the chicken breast, pat dry and mince or very finely chop. Mix with the egg, lemon zest and parsley and add enough breadcrumbs to form a mixture that's easy to work with. Season with salt and pepper. Shape into four patties and saute in hot oil in a nonstick pan on both sides for 5-6 minutes until golden brown. Rinse the apples, remove the core and cut into slices. Cut the buns in half and top with the apple slices, chicken patty and sauce. Serve with a fresh salad.
