- For the chicken skewers
- 4 skinless Chicken breasts
- fresh Lime juice
- 2 tsps ground paprika
- cayenne pepper
- ½ cup tomato Ketchup
- For the salad
- 2 Avocados
- 4 Tomatoes (quartered)
- 1 Red onion (chopped)
- 1 green pepper (deseeded and chopped)
- fresh Lime juice
- 1 Tbsp fresh cilantro (chopped)
- To garnish
- 2 Limes (quartered)
Preparation steps
1.
Cut the chicken breasts into 4 cm/1 " cubes and mix with the lime juice, paprika, cayenne and ketchup. Season with salt and pepper and set aside to marinade for 3 hours.

Cut the avocados in half lengthways, remove the stone and peel off the skin. Chop the avocados and mix with the tomatoes, onion and green pepper.
3.
Stir in the lime juice and coriander and season with salt and pepper.
4.
Turn on the grill to medium heat. Thread the chicken pieces onto wooden skewers and grill for about 8 minutes, turning frequently.
5.
Serve the chicken skewers with the salad, garnished with the lime quarters
