Preparation steps

1.
Mince the chicken breasts. Combine the minced chicken with the eggs, lemon peel, breadcrumbs, salt, pepper, curry powder and mustard and work to a shapeable mixture. Season to taste and divide into 12 portions. Press each portion around a lemon grass stalk. Place on the barbecue and grill on all sides for about 5 minutes. Serve with lime wedges and curry sauce.
