¾ cup Walnut
2 Tbsps sunflower oil
2 cloves garlic cloves (finely chopped)
cup dry white wine
1 ½ cups cream
1 ¼ cups Gorgonzola (rind removed, diced)
1 bunch Arugula

Preparation steps

1.
Cook the pasta in boiling salt water until al dente.
2.
Dry roast the nuts until they smell fragrant, remove from the pan, set aside, leave to cool and chop.
3.
Heat the oil in the same pan and fry the garlic. Deglaze with the wine and add the cream and the cheese. Stirring continuously allow the cheese to melt, simmer for around 5 minutes and season with salt and ground black pepper.
4.
Drain the pasta and stir into the sauce. Transfer to plates and serve garnished with the rocket and the walnuts.
