1 Tbsp olive oil

Preparation steps

1.
Beat the eggs and season well with salt and pepper.
2.
Stir in the ham, cheese and penne.
3.
Heat the oil in a large frying pan and pour in the egg mixture. Cook over a medium heat for 3-5 minutes, until almost set.
4.
Invert onto a plate and slide back into the pan and cook for a few more minutes until set and lightly browned.
