1 Tbsp olive oil
1 clove garlic cloves (minced)
1 onion (diced)
2 cups canned Tomatoes
2 Tbsps tomato puree
1 tsp dried Basil
1 tsp dried oregano
1 cup Cheddar cheese (grated)
1 cup Mozzarella (grated)
4 sprigs fresh Basil (for garnish)

Preparation steps

1.
Heat the oven to 180°C | 350F | gas 4.
2.
Cook the penne in salted boiling water according to the packet instructions. Drain and reserve.
3.
Heat the olive oil in a large non stick pan. Cook the onion and garlic for 5 minutes until the onion starts to soften.

Stir in the tomatoes, tomato puree the dried herbs and some salt and pepper, mix well and bring to the boil before turning down the heat and simmering for 10 minutes. Stir occasionally. Add a little water if necessary.
5.
Add the cooked penne to the pan and mix together well. Then transfer into a large ovenproof dish.
6.
Sprinkle the grated cheeses over the pasta and sauce, season with some salt and pepper and bake in the oven for 15 minutes until the cheese is melted and bubbling and starting to brown.
7.
Remove from the oven, garnish with fresh basil leaves and serve with seasonal vegetables or a crisp salad.
