2 Papaya (each 10 oz.)
½ bunch scallions
1 Red Bell pepper
1 Red chili pepper
cayenne pepper
½ bunch Basil

Preparation steps

1.

Rinse calamari in cold water and cut into 1-inch pieces.

Mix 3 tablespoons lemon juice in a bowl with parsley and olive oil and season with salt and pepper. Add calamari, mix, cover and let rest in the refrigerator.

Peel papayas, cut in half and remove seeds. Set aside one papaya half and cut remaining papaya flesh into small cubes. Rinse scallions, trim and cut into very small cubes. Rinse bell pepper, cut in half, remove seeds and ribs and cut into very small cubes. Rinse chile pepper, cut in half, remove seeds and chop into very small rings.

Puree reserved papaya in a bowl with an immersion blender, add papaya cubes, bell pepper, scallions and chile pepper, mix and season with salt, pepper, cayenne pepper and lemon juice. Rinse basil, pluck leaves from stem, chop finely and mix with papaya salsa.

Remove calamari marinade, drain briefly and fry for 2-4 minutes in a large, hot skillet. Arrange calamari on a serving dish with papaya salsa and serve garnished with lime wedges.
