2 green Bell pepper
Romaine lettuce
2 eggs (hard boiled)
For the dressing
4 Tbsps Red wine vinegar
2 shallots (finely chopped)
1 bunch scallions
5 Tbsps vegetable oil
salt
freshly ground pepper

Preparation steps

For the salad: Cook bulgur in salted water for 5 minutes. Rinse in a colander with cold water. Rinse and halve bell peppers, remove seeds and ribs and chop. Rinse and spin dry lettuce, tear into bite-sized pieces. Cut peeled eggs into quarters.

For the dressing: Whisk together all ingredients and season well. 

Combine all salad ingredients in a bowl and toss with the dressing. Serve immediately.
