- For the Sauce
- 4 Tbsps unsalted butter
- ½ cup hot sauce (like Frank's Lousiana Hot Sauce)
- 2 Tbsps Chili sauce (plus more to taste)
- 1 Tbsp dark brown sugar
- 2 tsps Cider vinegar
- For the Wings
- 8 cups Peanut oil (or vegetable oil)
- 1 tsp cayenne pepper
- 1 tsp ground Black pepper
- 1 tsp table salt
- 3 Tbsps Corn starch
- 48 ozs Chicken wing cut up (approx. 18 wings)
Preparation steps

Preheat oven to 200 degrees F.

For the Sauce: Melt butter in small saucepan over low heat. Whisk in hot sauces, brown sugar, and vinegar until well combined. Remove from heat and set aside.

For the Wings: Line baking sheet with paper towels. Heat 2 1/2 inches of oil in large Dutch oven over medium-high heat to 360 degrees F. While oil heats, mix together cayenne and black pepper, salt, and cornstarch in small bowl. Pat chicken dry with paper towels and place pieces in large mixing bowl. Sprinkle spice mixture over wings and toss with rubber spatula until evenly coated. Drop half of the wings into hot oil and fry until golden and crisp, about 10 to 15 minutes. With slotted spoon, transfer fried chicken wings to baking sheet. Keep first batch of chicken warm in the preheated oven while frying remaining wings.

To Serve: Pour sauce mixture into large bowl, add chicken wings, and toss until wings are uniformly coated. Serve immediately with the celery sticks and blue cheese dressing on the side.
