- 19 ozs ground buffalo
- 2 Tbsps finely chopped yellow onion
- salt (to taste)
- freshly ground Black pepper (to taste)
- 4 slices Brie (or Camembert)
- 4 Whole wheat buns (split)

Preparation steps
1.
Prepare the grill for direct grilling and preheat to medium-high heat.
2.
In a large mixing bowl, mix together the ground buffalo, yellow onion, salt and pepper. Using clean hands, shape the mixture into 4 generous patties.
3.
Grill the burgers directly over medium-high heat, 4 to 6 minutes per side. Check for doneness by inserting an instant-read thermometer into the side of the burger, internal temperature should register at least 160º F. Burgers should be cooked through with no pink areas.
4.
During the last 2 to 3 minutes of cooking, place a slice of cheese on top of each hamburger and lightly toast the buns, cut side down, on the grill.
5.
Assemble burgers and serve.
