Ingredients

For the blini
2 eggs
100 grams Pastry flour
100 grams Buckwheat flour
15 grams fresh Yeast
275 milliliters lukewarm milk
2 Tbsps melted butter
1 pinch salt
clarified butter (for cooking)
250 grams cream cheese
200 grams Smoked salmon (in slices)
for the garnish
cracked peppers
Arugula
Basil
pink peppercorns
organic lemon zest

Preparation steps

1.

For the blini, separate the eggs. Mix the flour and buckwheat flour. Dissolve the yeast in the milk. Combine the flour mixture, yeast mixture, melted butter, egg yolks and salt until smooth. Cover and let rise in a warm place for about 20 minutes. Beat the egg whites until stiff and fold into the batter.

Heat some butter in a pan. Pour in 1 tablespoon portions and cook until golden brown on both sides, about 1 to 2 minutes per side. Drain on paper towels and keep warm in an 80°C (approximately 175°F) oven.

Before serving, dollop each blini with cream cheese. Top with a slice of salmon.

Garnish with cracked pepper, arugula, basil, pink peppercorns and lemon zest before serving.
