150 grams Buckwheat flour
150 grams Pastry flour
1 pinch salt
20 grams Yeast (1/2 cube)
300 milliliters lukewarm milk
2 Tbsps melted butter
2 eggs
clarified butter (for frying)
150 grams Crème fraiche
400 grams thiny sliced Smoked salmon
2 Tbsps scallions

Preparation steps

1.

Separate the eggs. Combine the buckwheat flour, pastry flour and salt in a large bowl. Dissolve the yeast in the lukewarm milk and melted butter, then stir the mixture into the flour. Add the egg yolks, mix until smooth, cover and let stand for 20 minutes.

Beat the egg whites until stiff and fold into the batter.

Heat a bit of clarified butter in a pan and spoon about 1 tablespoon of the batter in. Cook for 2-3 minutes, until golden brown on both sides. Remove from the pan, cover to keep warm and continue with the remaining batter.  

4.

To assemble, top the blinis with a slice of smoked salmon, a dollop of creme fraiche and a few chopped green onions.
