- For the batter
- 200 grams Pastry flour
- 50 grams Buckwheat flour
- 20 grams Dry yeast
- 0.13 l milk
- 1 egg
- salt
- clarified butter (for cooking)
- For the topping
- 150 grams Smoked salmon
- 100 grams Sour cream
- 50 grams cream cheese
- freshly ground peppers
- salt
- For the garnishing
- Dill
- Basil
- Olives
- red peppercorns

Preparation steps
1.
For the batter: place flour in a bowl and sprinkle with dry yeast.

Whisk milk, egg and season with salt. Add to flour and whisk well. Cover batter and let stand for about 1 hour in warm place.

The oven on to 100 ° C (top and bottom heat) for keeping warm.

Heat butter in a pan. With a tablespoon, place batter into the pan and make small pancakes, few at a time, until golden brown on both sides. Keep warm in preheated oven at 100°C (approximately 200°F).
5.
For the topping: combine sour cream with cream cheese, mix until smooth. Season with salt and pepper.
6.
Spread cream mixture on blinis and top each with a piece of salmon.
7.
Garnish with dill, olives and red peppercorns. Serve.
