2 ⅔ cups Strawberries (chopped)
2 Tbsps powdered sugar
2 Tbsps Orange juice
9 ozs phyllo pastry (filo)
2 ½ Tbsps melted butter
2 sprigs mint (leaves chopped)
unwaxed lemon zest
1 tsp runny honey
1 ⅛ cups Yogurt

Preparation steps

1.
Mix together the strawberries, icing sugar and the orange juice.
2.
Preheat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.
3.
Unfold the pastry sheets and cut into strips approx. 7 x 22 cm. Brush with some of the butter.

Place 1 tbsp of the strawberries on the end of each strip and fold up in a zig-zag pattern into a triangle. Place the triangles on the prepared baking tray and brush with the remaining butter.
5.
Bake for around 15 minutes until golden brown.
6.
To make the sauce, mix together the mint leaves and a pinch of lemon zest with the honey and the yoghurt.
7.
Serve the pastries warm, drizzled with the sauce.
