- 1 Eggplant
- 2 Red Bell pepper
- 2 green Bell pepper
- 2 onions
- 200 grams Galia melon (Pulp)
- 4 Tomatoes
- 2 stalks oregano
- 2 stalks thyme
- 1 sprig rosemary
- 1 Banana
- 4 Tbsps olive oil
- salt

Preparation steps
1.
Rinse eggplant, clean and chop. Rinse bell peppers, cut into quarters, clean inside and cut into pieces. Peel onions and dice.

Cut melon into pieces. Rinse tomatoes and cut into quarters. Rinse herbs, shake dry and chop finely. Reserve a few herbs for garnish. Peel banana and cut into slices.

Heat olive oil in a large skillet. Sauté banana for short time. Remove from pan.
4.
Add eggplant, onions and bell peppers to the pan and sauté for 3 to 5 minutes. Add melon, tomato and herbs. Mix and sauté for a few minutes. Add salt and pepper to taste. Add banana and stir together. Serve garnished with herbs.
