4 medium Beets
2 carrots
1 ½ Tbsps olive oil (plus extra for drizzling)
1 onion (diced)
9 ozs Minced Beef
3 ½ ozs Mushrooms (chopped)
¼ cup vegetable stock
1 clove garlic cloves (crushed)
1 oz Walnut (finely chopped)
1 Tbsp raisins

Preparation steps

Heat the oven to 200°C (180° fan) 400°F gas 6.
2.
Put the beetroot and carrots in a roasting tin and drizzle with a little of the oil. Cover with foil and cook for 30-45 minutes, until tender. Remove from the oven and set aside.

Heat the remaining oil in a pan, add the onions and cook gently for 4 minutes. Add the meat and mushrooms and cook for 15 minutes, until the meat is cooked.

Pour in the stock and add the garlic. Cook over a medium heat for 4 minutes. Add the walnuts and raisins, stir well and remove from the heat.
5.
Using a spoon, scoop out the insides of the beetroot. Spoon the meat mixture into the hollow beetroot and put into a baking dish.
6.
Thickly slice the carrots and add to the dish. Drizzle with a little olive oil and bake for 10-15 minutes until heated through.
