12 small, waxy potatoes
2 garlic cloves

100 grams Pancetta (sliced)
2 Tbsps butter
freshly ground peppers
2 Tbsps scallions

Preparation steps

1.

Preheat the oven to 180 ° C convection.

Rinse potatoes thoroughly, pat dry and wrap in foil. Prick with a fork all around several times. Bake in preheated oven at 180°C (approximately 350°F) on middle rack for about 40 minutes.

Peel garlic and chop finely, grind with a little salt. Cut pancetta into strips.

Unwrap cooked potatoes, cut lengthwise and scrape out half of insides with a tablespoon (be careful not to damage potato shells). Mash scraped out potato with a fork, combine with garlic and butter. Season with salt and pepper and return to potato shells. Sprinkle with pancetta and return to the oven for about 5 minutes.

Sprinkle with chives and serve.
