For the herb-quark dip
250 grams Quark
200 grams Sour cream
1 generous pinch Vegetable broth
salt
white peppers
2 Tbsps scallions
For the potatoes
10 medium sized potatoes
2 Tbsps olive oil
20 slices Bacon
20 slices Raclette Cheese
lamb's lettuce (for serving)
salt

Preparation steps

For the potatoes: Scrub the potatoes and cut in half lengthwise. Lightly grease a baking sheet with olive oil place the potatoes with the cut side down. Bake in preheated oven at 200°C (approximately 400°F) for about 25 minutes.

For the herb-quark dip: In the meantime, all the ingredients for the herb-quark dip with 1 tablespoon of chives. Stir together and season to taste. Pour into bowls and garnish with chives.

After the end of cooking, take the potatoes out of the oven, and increase the oven temperature to 250°C (approximately 475°F). Carefully remove the potatoes from the baking sheet. Season the cut surface lightly with salt and pepper, put the bacon on top, cover with cheese. Again put in the oven and bake until golden.

4.

To serve, place the potatoes with the herb-quark dip on plates. Serve garnished with corn salad.
